WIC Participant Cashawna Celebrates National Nutrition Month with Tasty Recipes

Since April 2021, WIC families have increased access to veggies and fruits, which has helped strengthen their nutrition needs. Sometimes it isn't easy to think of recipes using fresh fruits, vegetables, legumes, and milk products, so we've come up with some fun recipes your and your family can enjoy. 

Black Bean Quesadillas

Ingredients:

  • 8 tortillas
  • 2 cups Mexican cheese
  • ¼  cup yellow peppers
  • ¼ cup green peppers
  • ¼ cup red peppers
  • 1/3 cup of corn
  • Cilantro to taste
  • 1 15oz  can black beans
  • Adobo seasoning to taste
  • 1 cup salsa
  • Sour Cream

Directions: 

  1. Heat a large frying pan over medium heat, and spray with no-stick spray or a smidge of butter. 

  2. Stir-fry the vegetables until desired texture. Drain liquid out of black bean can. Add black beans to stir fry mixture and cook until warm. 

  3. Once cooked, sprinkle cheese on top of the mixture. 

  4. Add fresh cilantro to taste.

  5.  Put everything aside and grill the tortillas, placing the stir-fry mixture in between the two layers of tortillas until cheese melts. 

  6. Add Sour cream and salsa.

  7. Enjoy! 




Banana Oat Pancakes

Ingredients:

  • 1 ripe banana (The riper, the sweeter)
  • 1 egg
  • ¼ cup of oats
  • Butter
  • Cinnamon
  • Milk
  • Strawberries 

Directions: 

  1. Use a fork to mash the banana and then add one egg, oats, and milk slowly while stirring and until you get the consistency of thick pancake batter (very easy on the milk).

  2. Add the desired seasoning. 

  3. Place a smidge of butter in the frying pan over medium heat. 

  4. Pour a portion of the batter in and flip once one side is done. 

  5. Add strawberries to the top of pancakes.

  6. Enjoy!
